Rotisserie chicken you prepped earlier in the week simmers in enchilada sauce until it's rich and delicious.
Pair it with a bright, creamy Mexican Street Corn Salad and all your favorite toppings for a meal that's simple, satisfying, and made for weekend vibes.

Meal Game Plan

1. Warm the Chicken

What you'll NEED
  • Reserved shredded rotisserie
    chicken (from Lunch Prep)
  • 1(10-ounce) can red or green enchilada sauce
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
What you'll DO

Combine everything in a skillet over medium-low heat. Simmer for about 10 minutes, stirring occasionally, until the chicken is hot and has absorbed the sauce.

2. Make the Street Corn Salad

What you'll NEED
  • 4 cups frozen fire-roasted corn, thawed

  • ¼ cup mayonnaise

  • ½ cup sour cream

  • Juice of 1 lime

  • 1 teaspoon Tajin seasoning

  • ½ cup crumbled cotija cheese

  • ¼ cup chopped cilantro

What you'll DO

Mix everything together until evenly coated. Taste and adiust with salt and lime juice if needed.

3. Warm the Tortillas

  • 8-12 flour or corn tortillas

What you'll DO

Warm the tortillas in a dry skillet or wrap them in foil and heat in a low oven until soft and pliable.

4. Build the Tacos

  • Chicken (from Step 1)

  • Warm tortillas (from Step 3)

  • Fresh cilantro

  • Lime wedges

  • Other toppings (optional)

What you'll DO

Fill each tortilla with the saucy chicken and top with fresh cilantro and a squeeze of lime. Or serve everything family-style and let everyone build their
own perfect taco.
